The English sometimes mix spinach into their dough to make the English Muffin for eggs benedict. I recreated the muffin using cangkuk manis (mani chai), a local sweet leafy vegetable to replace spinach for a local twist. When it comes to Saffron risotto, the one from Empire’s Spaghettini Taste of Italy is one of my favourites. Just take a look at the amount of visible Saffron just from the picture.
